Brownie Muffins

Instructions

1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
2. In a microwave-safe bowl, melt the butter and 1 cup of chocolate chips together in 30-second intervals, stirring after each until smooth.
3. Add the granulated sugar and brown sugar to the melted chocolate mixture and stir well.
4. Beat in the eggs one at a time, followed by the vanilla extract until the batter becomes glossy and thick.
5. In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt.
6. Gently fold the dry ingredients into the chocolate mixture until just combined. Do not overmix.
7. Divide the batter evenly among the muffin cups, filling each about 3/4 full.
8. Sprinkle extra chocolate chips or chunks on top for an indulgent finish.
9. Bake for 18–22 minutes, or until the tops are shiny and slightly cracked but a toothpick inserted in the center comes out with moist crumbs.
10. Allow muffins to cool in the pan for 10 minutes before transferring them to a wire rack.
