Cheesy Chicken and Veggie Breakfast Bake

Directions:

1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter or olive oil.

2. In a skillet over medium heat, add olive oil and sauté the red onion and bell peppers for about 5 minutes until slightly softened. Remove from heat.

3. In a large mixing bowl, whisk together the eggs, milk, garlic powder, paprika, salt, and pepper until well combined.

4. Stir in the sautéed vegetables, shredded chicken, green onions, and both cheeses. Mix until evenly distributed.

5. Pour the egg mixture into the prepared baking dish and spread evenly with a spatula.

6. Bake for 35–40 minutes or until the center is set and the top is golden and bubbly.

7. Let it rest for 10 minutes before slicing into squares. Serve warm with a side salad or fresh fruit for a complete meal.
